Tasting Room hours this winter are Thursday - Saturday 4-8pm for folks in Haines or those planning a visit here.  We will stay open until the eve of winter solstice - December 20th.

A Hot Drink for a Blustery Day

A hot toddy is a hot whiskey drink to soothe the soul.  Our take on the classic uses lavender and tea to take it up a notch. 

The Early Riser
1.5 ounces Wrackline Rye
0.5 ounces Lemon juice
0.5 ounces Homemade lavender syrup
1 bag Earl Grey tea
Hot water 

Build in the glass and garnish with lemon wheel. 

Our favorite recipe for lavender syrup: 
1 Cup water
1 Cup sugar
4 Tablespoons lavender buds
1 dash blueberry juice - for color 

Combine water, sugar, and lavender buds in a saucepan. Simmer until all the sugar is dissolved. Let sit overnight. Add blueberry juice to add a lavender hue to your syrup if you wish. 

Drinks in another Port

This month, our distiller Dave travelled to Ketchikan to host a cocktail pairing dinner at the Cape Fox Lodge. Folks from around Southeast Alaska enjoyed a four course dinner prepared by the lodge; each served with a signature Port Chilkoot Distillery cocktail. We hope you join us at our next pop-up event in Alaska.
